Our story

A new house, an old method.

D’nish was founded in 2025 on Refshaleøen, in a hall that used to build ship fittings. We did not inherit a recipe book. We inherited a standard, and then spent a year failing to meet it.

How it started

Ninety-one batches before the first tin.

The first attempt was too brown. The eleventh was too pale. Somewhere in the forties the dough started behaving, and by the ninetieth we understood why: it was never the oven. It was the twelve hours before the oven, and the butter before that.

A Danish butter cookie is not a difficult thing to make. It is a difficult thing to make the same way twice. That is the whole discipline: hold the dough at four degrees, hold the deck at 172, and let the shape decide when it is done rather than the clock.

We are not an old house pretending to be older. We are a 2025 house that decided the old method was right the first time, and that the honest thing to do was to learn it properly before printing anything on a lid.

2025 · Spring

A hall on Refshaleøen

Two deck ovens, one second-hand depositor, and a lease on a building that still smells faintly of marine paint.

2025 · Summer

Batch ninety-one

The vaniljekrans finally holds its ridge through the bake. We stop changing the recipe and start changing the process.

2025 · Autumn

The blue tin

Deep-drawn, five-pass print, embossed rather than stickered. The first run is 4,000 tins and the emboss is 0.2 mm too shallow. The second run is right.

2025 · Winter

Founded, officially

D’nish is registered and the first tins reach eleven independent grocers between Nørrebro and Aarhus.

Six, then a seventh

The assortment settles at six. A seventh is in trial and will only ship when it can stand next to the ring without apologising.

What we refuse

The list is short and it does not move.

No substitute fats

Butter or nothing. Palm fat and margarine bake beautifully and taste like a compromise, so they stay out.

No rushing the cold

Twelve hours is not a marketing number. Under ten, the ridges slump and the cookie goes flat and greasy.

No invented heritage

We were founded in 2025. Anything on our tin that suggests otherwise would be a lie printed in gold.

No disposable tin

Steel, not board. If it does not end its life holding buttons and thread, we designed it badly.
