Vaniljekrans

The vanilla ring, and the cookie every Danish tin is judged by. We pipe it through a nine-point star nozzle so the ridges stay deep enough to hold coarse sugar, then bake it a shade under what most bakeries would call done.

No. 02

Smørkringle

A knot, tied by hand, at roughly nine hundred an hour by someone who has been doing it since the first week. Higher butter and lower sugar than the ring, which makes it sandy instead of crisp — the quiet one in the tin.

No. 03

Finskbrød

Cut rather than piped: a ridged finger, brushed with egg and pressed with chopped almond and pearl sugar before it goes in. The name means Finnish bread. Nobody in Denmark can tell you why, and nobody has stopped baking it.

No. 04

Rosette

One turn of the wrist and the dough opens into fourteen petals. We finish it with a drop of Nordic sour cherry, cooked down until it is more fruit than sugar. It is the prettiest thing we make and it knows it.

Korendrys

Flat, wide and studded with currants left overnight in apple juice so they stay plump through the bake. The only cookie in the tin with anything chewy in it, which is exactly why it is there.

No. 06

Havsalt & Karamel

The one liberty we allow ourselves. A caramel square, dipped corner-first in seventy per cent dark chocolate and finished with flake salt. Founded 2025 means we are allowed exactly one idea the old tins never had.

What goes in, and what to watch for.

Wheat flour, Danish butter, cane sugar, free-range egg, bourbon vanilla, sea salt. Then, depending on the cookie: almond, currant, apple juice, sour cherry, cream, cocoa. That is the whole list.
